Crock Pot BBQ Pulled Pork Tacos

Ingredients
  

  • 1 Pork Tenderloin (1.2 to 2 pounds)
  • 1 tsp Salt
  • 1.5 tbsp Steamin' Steve's Sweet Mesquite Dry Rub
  • 1 cup Chicken Broth or Water
  • 1 cup Steamin' Steve's Sweet Heat "Original" BBQ Sauce
  • 0.5 Small Head Cabbage, Chopped
  • 1 1 Jalapeno Pepper, Seeded and Minced
  • 0.5 Red Onion, Minced
  • 1 Carrot, Chopped
  • 1 tbsp Chopped Fresh Cilantro
  • 1 Lime, Juiced
  • 12 Tortilla (Flour or Corn)

Instructions
 

BBQ Pork Tenderloin

  • Remove the pork tenderloin from the package, and place it on a cutting board.
  • Sprinkle the salt over the pork tenderloin.
  • Liberally season the pork tenderloin with the Steamin' Steve's Sweet Mesquite dry rub
  • Add the water or chicken stock to the bottom of the slow cooker or crock pot. Place the pork tenderloin into the slow cooker or crock pot.
  • Place the lid on the cooker and cook on high for 3-4 hours, or until the tenderloin is easy to shred with a fork.
  • Remove the pork from the slow cooker or crock pot and shred it with a pair of forks or with a set of meat claws.
  • Return the shredded pork back to the slow cooker or crock pot and mix it with any of the juices that remain in the bottom.
  • Add the Steamin' Steve's Sweet Heat "Original" BBQ Sauce to the slow cooker or crock pot and stir to combine.

Taco Slaw

  • In a bowl, mix together the cabbage, jalapeno pepper, red onion, carrot, cilantro, and lime juice.

Taco Prep

  • Warm the taco shells according to their package directions.
  • Fill the taco shells with 2 tablespoons of pulled pork. Top with taco slaw and serve!

Notes

For those looking for a bit more kick out of their pork, substitute Sweet Heat 'Mild' or 'Hot' in place of the 'Original'
If you are cooking for a large party, depending on your slow cooker/crock pot size you can cook 3-4 tenderloins at the same time. Cook times will increase.
